Jaylah's cousin had a western theme birthday party this past weekend. So what does a baker give for a gift? Cowboy hat cupcakes of course! Here's how you can make them too! Ingredients: Boxed chocolate cake mix Chocolate icing Pringles Licorice Twist and pull Gum drop Make the cupcakes according to box directions. Ice the cupcakes after they have cooled. Assemble Hat: Place a bit of icing on the Pringle to use as "glue"for the gum drop candy. Place the licorice piece around the gum drop. Now you have amazing Cowboy Hat Cupcakes! Happy Baking!

Jaylah has been busy baking lately. Here are a couple of sweet treats she's made recently. Jaylah made me literally the sweetest gift ever for Mother's Day. She knows mommy loves the lemon strawberry combo. She made me lemon cupcakes with strawberry icing. The presentation was amazing and the cupcakes were delicious. Jaxson turned 6 and wanted nothing but a football themed birthday party. Jaylah had a great idea to do football cupcakes. Then she had an even better idea to do the tear away cupcakes shaped like a football. Just to warn...I helped with these and I probably shouldn't have because she has made some wonderful looking cupcakes and I am sure I am the reason these didn't turn out the way she wanted. I can say that Jaxson LOVED them and that's all that mattered. I love that Jaylah has found something she loves to do. I also love that she uses her love of baking to make other people happy! I couldn't ask for anything more!

It's been awhile but the cupcakes have begun to low back into this house! Jaylah had to take a mini break but she is back at it again!!!! Jaylah knows that her mama loves some iced animal cookies so she decided to make a Frosted Animal cookie cupcake. Sometimes her baking process is about creating from scratch to perfect a recipe or try something new. Other times her process is about the decorating-piping techniques and using different things to top her cupcakes. This cupcake was about the decorating look. It kind of reminds me of playing with play dough when I was little. Jaylah has been working on decorating cakes and cupcakes with fondant. Here are some of her latest creations. One of my dear friends and Jaylah's 5th grade teacher is an amazing baker. She made a mud cake and asked Jay to make some fondant pigs for the cake. The finished product was amazing. After her cousin had an Emoji Themed Party it inspired her to make an emoji cake. The cake is a simple vanilla cake. Not all fondant projects come out as visioned but the trying is what makes me so proud of her. Her cousins recently got a dog named Bubba and Jaylah has already taken a liking to him and she's only met him once. Here are some cupcakes she made for her cousins to welcome Bubba to the family. Ever seen a macaron and didn't really know what it was? They're really cool to look at but what are they? What's a Macaron? A macaron is a pastry made famous by the French. I made these for a party I was going to and I ran out of time for the buttercream icing so I piped some white icing I had onto one of the cooled cookies. Then placed another cooking on top. Happy Baking!!!Since my mom is having an easy New Year's Eve party this year I think the dessert should be easy as well. I think that a mini dessert (also called shooters) will be perfect for the party! Everyone loves a good cheesecake so I decided on an Easy No Bake Strawberry Cheesecake Shooter. INGREDIENTS
INSTRUCTIONS In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese, heavy cream and sugar until smooth. Add the lemon juice, lemon zest and vanilla extract and beat until light and creamy, about 3 minutes. Add a layer of graham crackers to the bottom of each parfait glass. Top the graham crackers with a layer of the cheesecake then a layer of fruit. Top each parfait with a dollop of whipped cream and serve. I am waiting until the party to add the whipped cream! My aunt and my grandma suggested that I should try a Soda Cupcake so I did! Even though I don't drink soda I still wanted to try it, so lets get started! CHERRY VANILLA COKE CUPCAKES RECIPE CUPCAKE INGREDIENTS 2 1/2 cups flour 1 1/4 tsp baking powder 1/4 tsp baking soda 3/4 tsp salt 1 3/4 cups sugar 10 tbs unsalted butter, melted 1/2 c milk 3 Tbsp oil 1 tsp vanilla extract 1/2 cup Cherry Coke 6 large egg whites CUPCAKE DIRECTIONS 1. Preheat oven to 350°F. Place baking cups into a muffin or cupcake pan like this. 2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and 1 1/2 cups of sugar. 3. Mix together the melted butter, milk, oil, vanilla, Cherry Coke, and 3 of the egg whites. 4. Slowly add into the dry ingredients and mix until combined. 5. Place remaining egg whites in a mixing bowl and beat using a whisk attachment until foamy. Add the remaining sugar and beat until stiff peaks form. 6. Gently fold 1/2 of the meringue into the batter until just combined. 7. Divide batter evenly into cups, then bake at 350°F for 18-20 minutes. 8. Let cupcakes cool in their pans on a wire rack for 20 minutes and then remove from pan to completely cool. (Frosting info below!) Happy Baking!! Check in next time with J.B's Sweet Treats !!!!!

It's the Holiday season and who doesn't like candy canes? My family loves candy canes and since Christmas is coming up I decided that I should make Vanilla Peppermint Cupcakes! So lets get started ! INGREDIENTSCupcake -¾ cups of butter,softened -1 ½ cups of sugar -3 eggs -1 tsp vanilla -1 cup of sour cream -½ cup of milk -2 ½ cup of flour -2 tsp. Baking powder -½ tsp. Baking soda -½ tsp. Salt -¼ cup jimmies/sprinkles(optional) Buttercream Frosting -1 cup butter,softened -3 cups icing sugar (powdered sugar) -4 tbsp. Whipping cream -2 tsp. Peppermint extract -3-4 candy canes crushed for topping(optional) InstructionsFirst, you need to gather your materials. Next, Preheat oven to 350F and line 24 muffin pans with cupcake liners (I used red and white snowflake baking cups). Then, Cream butter and sugar together until fluffy. Add the eggs one at a time and beat in vanilla, sour cream and milk. Mix well. In another bowl whisk the flour, baking powder, soda and salt together. Slowly add the dry mixture into the butter mixture and mix until just incorporated. Fold in the sprinkles(I left this part out but feel free to add the sprinkles). Spoon into cupcake liners ⅔ full (1/2 full if using the upright cupcake holders like I used). Bake for 18-20 min. until they bounce back to a light touch and are lightly golden. For the icing, cream the butter in a large bowl. Carefully incorporate the rest of the ingredients alternating the icing sugar with the cream and the peppermint extract and continue beating until light and fluffy. Place icing in a piping bag with a desired tip and decorate as desired. You don’t have to be fancy. Sprinkle with candy canes. Place cupcakes in a covered container until you are ready to eat them.
